'The Ultimate Bacon Sandwich | John Quilter'

Cooking on the street means cooking when it\'s cold, wet, sleet or snow. So I need to make sure I start myself off the right way. Nothing can kickstart your day like a good ol\' bacon sarnie...and this ain\'t no good ol bacon sarnie. This be the ULTIMATE bacon sarnie. Why? Watch and find out! FULL RECIPE Ingredients For the homemade ketchup 1 red onion 2 stalks of celery Thumb of ginger 2 cloves of garlic 500g vine cherry tomatoes 3 tbsps olive oil 1 tsp ground coriander 1 tsp ground allspice 1 tsp celery salt 1 cinnamon stick 100g golden caster sugar 1 tbsp tomato puree 500ml tinned chopped tomatoes 100ml water 100ml red wine vinegar ½ to 1 tsp siracha, to taste  Sweet cured smoked streaky bacon 2 thick slices of sourdough bread, cut on the diagonal  Method Dice the red onion, celery, ginger and finely chop with garlic and cherry tomatoes, reserving the stalks. Heat a casserole dish over a medium heat with the olive oil and add the vegetables, ginger and garlic. Stir, and add the ground coriander, allspice and celery salt. Cover with a lid, and leave to sweat for 3-4 minutes.   Add the cinnamon stick, sugar and tomato puree, along with the stalks from the cherry tomatoes. Twist and snap each in a couple of places to encourage them to release their tomato flavour. Stir well and cook for another 2 minutes. Add the chopped tomatoes and water, and replace the lid. Leave to simmer for 5-10 minutes.  Decant the tomato sauce into a tall jug, discarding the cinnamon stick and tomato stalks, and whizz to a smooth consistency with a stick blender. Strain through a sieve into a large bowl, to create a silky ketchup. Return to a saucepan and place back on the heat. Add the red wine vinegar and siracha, and season with salt and freshly ground black pepper. Bring the sauce back up to the boil and then lower to a simmer, to encourage it to reduce a little more and thicken up.  Heat a griddle pan over a medium heat. Add the bacon and cook to your liking.   Meanwhile, decant your homemade tomato ketchup into a sterilised bottle, if you wish.   Remove the bacon from the pan and wrap in tin foil to keep warm. Drizzle the bread slices with olive oil, and place oil-side down in the griddle pan to toast and soak up the bacon juices. Turn and toast the other side, and remove when golden all over.  Load one slice of toasted sourdough with bacon, and spread the other with the homemade ketchup. Sandwich together and place back in the pan for 30 seconds on each side.
